Pouchong, also called Baozhong, is a lightly oxidised oolong tea from Taiwan. Leaves are beautifully curled into a long twisted shape and have a distinct emerald green colour. Steeping in hot water just off the boil gives a light green infusion with intoxicating floral scent. Taste is that of a light 'green' oolong, floral and honey notes with a delightful buttery finish. When brewed cold the liquor is very pale green and the taste very clean, delicately vegetal with subtle sweetness.
Yields up to 6 infusions with hot water. If infusing in cold water first, you need to prolong the brewing time to up to half an hour (but is ready to drink in 10 minutes) and can then also brew it hot, but you would get fewer subsequent hot infusions.
